Ingredients

  • ½ c. salted butter (1 stick), softened
  • ¼ c. vegetable oil
  • 1½ c. all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 3 Tbsp. granulated sugar
  • 1 c. light brown sugar
  • 2 eggs, room temperature
  • 1 tsp. vanilla extract
  • 1½ c. oats
  • 1 c. butterscotch chips
 

Instructions

  1. Preheat oven to 325 degrees. Fit and fold down parchment paper inside an 8x8 inch baking pan. Leave some overhang so that you can lift the bars out for easy cutting.

  2. Sift together flour, baking powder, baking soda, and salt in a medium bowl. Set aside.

  3. Place butter and oil in mixing bowl, blend well until mixture is fully combined.

  4. Add in sugars, then eggs and vanilla.

  5. Spoon in flour mixture. Mix until flour streaks no longer appear before adding oats. Add in oats, mix well.

  6. Fold in butterscotch chips.

  7. Pour batter into prepared pan and bake for 35-37 minutes. Bars will look done when the edges are slightly puffed, and the center appears to set.

  8. If you insert a toothpick in the center and remove it, some moist blondie crumbs may appear (crumbs are fine, but not batter).

  9. Allow to cool completely before cutting.
