Turkey Sausage & Spinach Meatballs
Whether your looking to spice up your breakfast or a new grab-and-go morning option, these turkey sausage meatballs have quickly become a home favorite. During the holiday weekend I had family & friends visiting, and thought one batch of these would do us justice. Boy, was I wrong! In the span of four days, I have made six batches of turkey sausage & spinach meatballs. This one was too good not share with you, the crowd said so.
While I appreciate the lightness of turkey sausage in comparison to pork, you can substitute turkey sausage for ground pork, or even, pork sausage.
It’s safe to say, I’ll be adding these to my grab-and-go breakfast options during the work. These meatballs are prefect for making ahead and reheating before you jet out the door. And let me not forget to share… It’s a budget-friendly recipe, just the way I like it!
1 pound ground turkey sausage
1/4 cup onion, diced
2 cloves of garlic, minced
2 tbsp tomato paste
1 cup fresh chopped spinach
3 tbsp chopped Italian parsley
pinch of sea salt and black pepper
1 tbsp olive oil
Preheat oven to 350 degrees F.
Coat the bottom of baking dish or pan with a tablespoon of olive oil, and set aside.
In a bowl, combine turkey sausage, onion, garlic, egg, tomato paste, spinach, parsley. Sprinkle with salt and pepper and mix well.
Wet hands to prevent mixture from sticking to your palms.
Form meatballs by rolling into balls, about 1 tablespoon of mixture per ball. Place meatballs in baking dish/pan about one inch apart.
Bake for 35 minutes, or until browned and cooked fully through.
Best served hot.
Any leftover meatballs should be stored in an air tight container or bag, and refrigerated. Reheat for grab and go breakfast in the morning.
