Sweet Chicken Salad for Two
Summer and salads seem to be synonymous for many reasons, some which include:
It’s too hot to turn on the stove or oven;
It’s a great way to use what you already have in your frig; and
It’s a meal-in-itself.
Being on a budget and limiting my meals eaten out, does not mean I have to sacrifice flavor in my mid-day meal. There’s times when I’m chilling at home on the weekends, and don’t want to leave to pickup an item from the grocery store. This Sweet Chicken Salad for two, has proved to be a quick, easy, and delicious lunch for me and friend. The best part is, it requires all ingredients that I regularly keep stocked in my kitchen (check out my monthly market stock items list).
The keys to making this a great tasting salad, is chopping the chicken and the vegetables. I would strongly advise against using a food processor, to avoid grinding the ingredients to a pulp.
1 cup chicken, chopped
1/2 cup celery diced
1/4 cup onion, diced
1/4 cup mayonnaise
1 hard boiled egg, chopped
2 tbsp sweet relish
salt and pepper, to taste
Tossed chicken with celery and onion.
Stir in mayonnaise and sweet relish.
Fold in eggs, carefully.
Chill thoroughly. This is optional, but highly recommended to allow the salad to set.
Serve on butter lettuce or on a toasted bun as an open face sandwich.
